Caporaso – Mediterranean meets Alpine

Our head chef at the restaurant Madre Nostra Davide Cretoni, himself from Rome, seeks only the best Italian products for his cuisine. One of the selected suppliers is Caporaso - one of our favorite partners, which helps us to bring Italy's culinary tradition in all its deliciousness with modern creations and refined classics to the plates of our guests. The team of Caporaso presents itself together with its products straight itself.

May we introduce ourselves: Caporaso AG is a long-standing well-known player in the Swiss market for Italian food. Renowned gastronomy chains, restaurants, pizzerias, hotels, hospitals, bakeries, company canteens and street food providers are among our customers.

Our history began about 40 years ago with the production of mozzarella in Lengnau in the canton of Aargau. The Caporaso cheese dairy was founded in 1982 by Giovanni Caporaso, master cheese maker. Walter Caporaso, current owner and managing director, joined his parents' company in 1987. Caporaso Mozzarella quickly established itself and more and more customers joined the company. Producing in such large quantities was no longer possible. The production company was later transformed into a pure trading company. However, the Caporaso Mozzarella, which is known throughout Switzerland, continues to be produced according to the company's own recipe in a cheese dairy in eastern Switzerland.

Caporaso AG is considered as the experienced importer of first class food products from our neighboring country Italy. Our SME offers a very wide range of Italian specialties, imported directly from Italy. We guarantee a fast delivery through our own logistics and therefore freshness and quality at any time. Currently we count 1'500 products in our stock. We deliver fresh products, frozen and dry goods and transport everything to our customers' doors. Meanwhile we count more than 3'000 customers all over Switzerland to our customer base.

Through our personal consultation on site, the wishes are received directly and uncomplicated. No matter what it is - we can find it. Because we are constantly on the lookout for culinary delights from Italy and will continue to surprise you with first-class new products in the future.

We regularly supply a whole range of top quality products such as San Daniele PDO ham, Bontaleggio, Ricotta, Coppa di Parma, Mortadella, Parmigiano, Truffle Cream, Olive Oil from Tuscany, Carciofi alla Romana and much more.

Parmigiano Reggiano Vacche Rosse – Origin Modena (IT) Parmareggio

The milk of this particular breed of cows of the "Reggiana" has certain qualitative characteristics that differ from the traditional Parmigiano Reggiano. In particular, the milk of the "Vacche Rosse" contains a basic protein that, in the transformation of milk into cheese, ensures a better ripening of the cheese and therefore a better digestibility. For this reason, the production rules for Parmigiano Reggiano "Vacche Rosse" stipulate that the product can be marketed only after a minimum of 24 months of maturation, compared to 12 months for traditional Parmigiano Reggiano. The result is a cheese that, thanks to its long aging, maintains a sweet, delicate and persistent taste.

Olio Extra Vergine di Oliva «Professional» – Origin Forlì (IT) Olitalia

Olio Extra Vergine di Oliva "Professional" is extremely versatile and can be used in various gastronomic areas. It is suitable both for cooking at low and high temperatures, but also for seasoning dishes after cooking. Thanks to its distinctive taste, it enhances any dish and makes it unique. A must-have for every kitchen.

San Daniele Ham DOP «Riserva» without bone 18 months – Origin Friuli (IT) Grandi Salumifici Italiani

San Daniele ham (ital. Prosciutto di San Daniele) is one of the high quality hams from Italy. It has a pinkish-brown color with a thin white layer of fat, the taste is aromatic-sweet. It is named after its place of origin, San Daniele del Friuli, northwest of Udine in Friuli. The combination of dry air from the Alps and warm, humid air from the Adriatic Sea gives San Daniele its unique taste. San Daniele ham is made from the legs of the Large White, Landrace and Duroc breeds of pigs.

Truffle cream – Origin Borgo San Dalmazzo (Piemont) IT Inaudi Clemente & C

The Black-T is a product based on black summer truffles and mushrooms. The truffles and mushrooms, processed by hand, are transformed into a final product ideal for seasoning pasta dishes, risotto, mashed potatoes and as an accompaniment to meat fillets. Black-T is highly recommended for seasoning pizza! Inaudi has always signed products selected according to precise quality criteria and packaged entirely by hand with great care and dedication to craftsmanship.

Bontàleggio D.O.P – Origin Pasturo (IT) Emilio Mauri S.p.A.

The Taleggio DOP Bontàleggio is a classic Italian soft cheese. It is aged for at least 35 days in the natural caves of Pasturo in the heart of Valsassina. Under the thin, crusty crust, the ivory-colored texture of the cheese slowly begins to change during the aging process, becoming buttery and soft. The creamy texture gives Bonàleggio a unique flavor and tangy aroma. The cheese is ideal for risotto, pasta, polenta or even pizza.

By constantly focusing on customer needs and flexibly adapting our offering, we came out of the Corona pandemic together stronger and with new momentum. It wasn't easy, but we did it together and our customers came back with valuable experience and new concepts.
